From fritto misto to veal with prosciutto, Italy offers a seemingly endless selection of dishes that celebrate land and water. The country's thousands of miles of coastline, lakes and rivers, prized cow breeds and world-class salumi tradition result in meat- and seafood-centric dishes that can be rustic, sophisticated and anything in between. In this class, you will cover specialties from all corners of Italy, making fritto misto (assortment of fried fish and seafood); veal saltimbocca; asparagus-parmesan risotto; grilled Treviso radicchio; and chocolate and cherry biscotti. An Aperol spritz will awaken your appetite.

In this course, you'll learn the techniques to prepare four simple and delicious seafood dishes. The chef instructor will share tips and tricks for selecting the best seafood, and you'll sit down to your completed menu of: refreshing shrimp salad with herbal vinaigrette; Thai curry mussels; fish tacos; steamed fish en papillote with vegetable ribbons, citrus and herbs.

For this delightful class, you will dine on a variety of hors d'oeuvres along with a select group of wines. Your evening begins with a discussion of the origin and making of sparkling wine, while tasting various examples --- from non-vintage to vintage to rosé. The highlight of the tasting features a prestige cuvée Champagne paired with an American challenger. The class rounds out with students enjoying a buffet of classic luxury food matches while indulging in additional bubbly, making for a sparkling evening you'll always remember.

ICE pastry chefs will give you all the secrets for making a perfect pie crust, teaching you the same techniques and tips used by ICE career pastry grads at New York's top restaurants. Working in teams of two, you'll make two 6-inch pies from scratch. Choose from: strawberry rhubarb crumble; peach pie with almond crumble; blueberry lattice; and cherry lattice.
