Born in Puerto Rico, Chef Pablo first became interested in food and cooking at an early age. Chef Pablo enrolled at ICE where he graduated with honors. During training he was introduced to the term ‘soigne’. One of his instructors always referred to him as the soigne chef. From that point the term has stayed with him. After graduation, Chef Pablo apprenticed under Executive Chef Dan Barber of Blue Hill at Stone Barns; and then went on to work in restaurants and catering. Chef Pablo has devoted much time and energy to teaching adults and children the essentials of cooking, and has joined the team of chefs at ICE. In addition to teaching cooking classes, Chef Pablo creates menus and wine parings for private dinner parties in the New York City Metropolitan area.
