You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

Essential Wines of The Rhone Valley

Move over Bordeaux and Burgundy, wine from France's south is more and more becoming the go-to area for flavorsome as well as thoughtful selections. This region is not only one of the oldest wine regions of France, but also a top producer, second only to Bordeaux. The prime regions lie along the Rhône, but the subregions and many appellations - as well as the numerous grape varieties permitted - make for a varied and interesting wine selection. Certainly, delicious reds such as savory Syrahs of the northern Rhône or classic Châteauneuf-du-Pape, but also rich whites and refreshing rosés. Richard Vayda, ICE's resident sommelier, will host the evening's regional wine survey. Snacks for pairing will be served, with at least 9 wines included in the tasting.

Experience the bold, aromatic flavors of the Caribbean in this "Essentials of West Indian Cooking" class! You’ll make Haitian Soup Joumou and Jamaican Jerk Chicken; Dominican Gandules and Rice with caramelized plantains; and Trinidadian Channa Doubles (a beloved and satisfying street food). It’s a smoky-meets-spicy, sweet-plus-savory menu that gives you a taste of the islands – and the skills to replicate them at home.

Couples: Vegetarian Favorites

Travel the world with hearty and vibrant vegetarian entrees from around the globe! These international standouts will quickly become your go-to recipes for any day of the week. Healthful, flavor-packed and a snap to make, this is a menu you'll love learning together. We'll make all three dishes, from comfort food to Asian specialties to Mexican mains, then sit down to this meal of: sesame-crusted Asian tofu with garlic-fried wild rice; enchiladas suizas with cheese and roasted vegetables; and orecchiette pasta with roasted cauliflower and caramelized onions.

Expand your knowledge and techniques in preparing dishes using fresh pasta dough, homemade sauces, fresh herbs, and more. Over the course of the evening, you will learn to create intricate, trattoria-quality pastas, such as: Potato Gnocchi with Gorgonzola Sauce; Ricotta Cavatelli with Peas, Mint and Lemon; and Spaghetti Carbonara.
