Brunch & Punch

Rather than standing in line at a crowded restaurant, invite your friends over for brunch. This class will teach you a selection of great sweet and savory brunch dishes that include: frittata; sweet and savory crêpes; scones with citrus curd; and of course, boozy punches!

Stocks, Soups and Sauces

Stocks, Soups, and Sauces is a three-day, hands-on course focused on the essential building blocks of professional cooking. Through demonstration and kitchen practice, you’ll learn how to develop depth of flavor, achieve proper texture, and create balanced dishes. You’ll begin with stock making, learning principles of extraction and clarity while preparing chicken, veal, fish, and vegetable stocks, along with classic clarification techniques. Those skills carry into soup production as you prepare beef barley, clam chowder, chicken noodle, and roasted carrot purée, refining seasoning and finishing along the way. The course concludes with sauce making, emphasizing pan sauces and classic preparations such as hanger steak with red wine pan sauce, chicken breast with white wine pan sauce, pan-seared cod with sauce Normande, and vegetables finished with Parmesan velouté.

Essential Wines of Alsace

Often overlooked by casual wine drinkers, this ancient grape-growing and winemaking area is a star in many enthusiasts’ cellars. Passing back and forth between Germany and France several times throughout history, Alsace's Germanic influence in grape varieties and labeling is clear, but the French style of the wines shines through. While featuring fragrant dry Rieslings, Alsace offers many other charms, including delicate Pinot Noirs, sparkling Crémant d’Alsace, and other luscious late-harvest examples. Join Richard Vayda, ICE's resident sommelier, on an exploration of the history, wine regulations, labeling and, most important, wines of this classic wine region. The class will sample nine or more wines, accompanied by matching snacks.

Plant Based Dim Sum

Experience the art of plant-based dim sum in this hands-on class, where you'll craft a variety of vegan bites inspired by classic dim sum flavors. Learn traditional techniques and plant-based adaptations to dumplings, spring rolls, buns, and rice porridge, and pair them all with fragrant tea and a sweet dessert. Students will work in groups to prepare Chili Crisp Smoked Tofu & Scallion Gyoza; Five Spice Mushroom Spring Rolls with Apricot Ginger Sauce; Sweet Hoisin Eggplant & Crushed Peanut Steamed Buns; Ginger Scallion Congee with XO Glazed Seitan Crumbles; and Chrysanthemum Goji Tea with Dark Chocolate Red Bean Truffles. (Note: This class is vegan.)
