Make Korean appetizers, banchan, meat and soup just as acclaimed restaurateur Chef Sohui makes them at her home and in her restaurants. Born in Seoul, Sohui Kim (a New Yorker since the age of 10) is an ICE graduate who's worked with Dan Barber and Michael Anthony at Blue Hill and Anita Lo at Annisa. She opened and owns the acclaimed Brooklyn restaurants The Good Fork and Insa, and is the author of the highly regarded "The Good Fork Cookbook" and "Korean Home Cooking." Your authentic menu consists of: kimchi pancakes; potato stewed in soy sauce; charred eggplant with white soy and chiles; stuffed perilla leaves; watercress namul; bulgogi beef with lettuce, rice and ssam jang; and soondubu (silken tofu stew with seafood). Everyone will receive a copy of Chef Sohui's latest cookbook, "Korean Home Cooking."
You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

While visions of sandy Caribbean beaches might be the first thing to come to mind when thinking of Puerto Rico, mountains, rivers and lakes make up a large portion of the landscape. Come learn more about the island and a cuisine that celebrates a rich and diverse heritage, as you make arroz con gandules (rice and pigeon peas); bacalaitos (salt cod fritters); pollo guisado (chicken stew); and mofongo (mashed green plantains).
Learn everything you need to know to recreate that quintessential New York staple, the bagel! Make everything you love about brunch, from the fixings to the bagels to the boozy beverages. We'll make: bagels (in multiple flavors: everything, salt, sesame, poppy seed); bagel fixings (scallion cream cheese, tomatoes, onions, capers, lox); whitefish salad; and Bloody Marys to wash it all down.

Over the course of the evening, you will learn to create intricate, trattoria-quality pastas, such as: Potato Gnocchi with Gorgonzola Sauce; Ricotta Cavatelli with Peas, Mint and Lemon; and Spaghetti Carbonara.
