Make Korean appetizers, banchan, meat and soup just as acclaimed restaurateur Chef Sohui makes them at her home and in her restaurants. Born in Seoul, Sohui Kim (a New Yorker since the age of 10) is an ICE graduate who's worked with Dan Barber and Michael Anthony at Blue Hill and Anita Lo at Annisa. She opened and owns the acclaimed Brooklyn restaurants The Good Fork and Insa, and is the author of the highly regarded "The Good Fork Cookbook" and "Korean Home Cooking." Your authentic menu consists of: kimchi pancakes; potato stewed in soy sauce; charred eggplant with white soy and chiles; stuffed perilla leaves; watercress namul; bulgogi beef with lettuce, rice and ssam jang; and soondubu (silken tofu stew with seafood). Everyone will receive a copy of Chef Sohui's latest cookbook, "Korean Home Cooking."

Here, you’ll discern the smoky depths of mezcal; traverse tequila’s flavor profiles; hear the history of the margarita; and learn to make flavorful, well-balanced agave cocktails. Recipes for this class include: Margarita, Naked and Famous, Paloma, Mexican/Mezcal Mule, Tequila Sunrise, Ranch Water, Oaxaca Old Fashioned, and Mezcal Negroni.
Before heading out to your local sushi bar for your next date night, come to ICE to learn how to create your own sushi and sake bar at home. Together, you'll start by learning the basics of how to make the foundation of all sushi: delicious, seasoned rice. You'll then create a variety of sushi accoutrements, along with vegetables and raw fish. Finally, you'll learn to make traditional hand rolls, maki, futomaki, and nigiri, before sitting down to eat with a refreshing glass of Japanese sake or a cucumber-sake cooler.
