What to Expect

You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

Introduction To Fermentation: Mexican Inspired Flavors

Fermentation is an ancient culinary art praised for its environmental and health benefits, as well as the robust flavors that it yields. In this class, students make four jarred ferments (to take home) then apply the same ferments (created for in-class use) to make dishes they can replicate in their own kitchens. These dishes are Fermented Taqueria Vegetable Nachos; Fermented Pineapple Red Pepper Salsa; Fermented Tomatillo Serrano Goddess Dressing; and Fermented Mango Hibiscus Punch. Through theory and hands-on practice, students will discover fermentation flavor profiles and learn fermentation techniques and safety protocols. (Note: This class is vegan & gluten free.)

Essential Wines of Burgundy

Often heralded as one of the most difficult wine regions to understand, Burgundy can actually be a delight once you understand how to enjoy its treasures. Richard Vayda, ICE's resident sommelier, says the secret is simply to taste these brilliant wines. So, join us for our grand tour of the Bourgogne, exploring major subregions and villages, south to north, in this delicious and fascinating wine area. Richard searches the ICE cellar to find some lovely aged Burgundies to pair with younger samples, offering a true overview of the Bourgogne. The special tasting will feature at least 9 wines and regional cheeses, of course.

The Bear - A Day at The Beef of Chicagoland

Spend a day at the famed Original Beef of Chicagoland. Based on the award-winning show "The Bear," we'll be cooking some of Carmy and Mikey's favorites. In this class, you'll make The Beef's Italian Beef Sandwich, Carmy's Chicken Piccata, Mikey's Family Meal Spaghetti Pomodoro and Marcus' Chocolate Cake. Yes, Chef!

Couples: Burgers & Beer

What could go better together than burgers and beer --- cooked by you and your significant other? In this class created specifically for couples, you'll learn to make burgers for every taste and sides for every craving --- along with a thirst-quenching selection of beer. Your menu: spicy Buffalo turkey sliders; beef burgers, cheeseburgers and Juicy Lucy burgers; quick pickles; crispy onion rings; secret sauce; and to drink, ice cold beer.
