This year, ICE welcomes back Karen Portaleo. Karen is a cake and chocolate artist creating fantastical cakes at Highland Bakery in Atlanta, Georgia. She has appeared on numerous television shows, and her work has been featured in various publications and websites worldwide. She grew up in a family of pastry chefs, and combines a background in art, prop and set design, and clay sculpture. In this fun class, students will learn structure and armature making, making modeling chocolate, sculpting with modeling chocolate, creating clothing with fondant, painting on chocolate, painting on fondant, and more! Chef Karen teaches cake art classes internationally, and has shared her technique and skills in 18 countries. Chef Karen encourages students to individualize their pigs!

Pinot blanc, pinot grigio or pinot chardonnay? This varietal wine tasting focuses on key white grape varieties that produce some of the world's best white wines! Richard Vayda, ICE's resident sommelier, leads this side-by-side tasting, highlighting the typical look, taste, flavors, styles and food pairings of these selections from around the globe. The tasting will include eight wines, plus matching cheeses.
Simple and delicious are the themes for this class, which teaches you how to make fresh Italian dishes that are so good --- and easy to execute --- you'll make them for yourself, friends and loved ones again and again. Premium ingredients shine in this menu, drawing from the country's great traditions: Tuscan fennel and raddichio salad; hand-rolled meatballs; risotto Milanese and sauteed broccoli rabe with garlic.
Nothing beats the rich flavor and perfectly al dente texture of handmade pasta. So let's practice making our own pastas by hand and concoct some rich fillings, learning how to stuff ravioli, tortellini and cannelloni. As we make these three heavenly pastas, we'll complete them with homemade sauces that are the perfect complement to each shape and filling. You'll handcraft: lemon ricotta ravioli with safe brown butter, roasted red pepper tortellini in fra diavolo sauce, and beef angolotti in brodo.
Whether you're making a casual dinner or a gourmet multicourse meal. We'll cover techniques including poaching, sautéing, grilling and cooking risotto. Using your newly acquired skills, we'll make and dine on a complete meal of: grilled vegetable gratin; mushroom risotto; pan-seared steak with compound butter and mesclun salad with Dijon vinaigrette.
