In this hands-on class, veteran Pastry Chef Michelle Tampakis, a gluten-free cooking expert, shows you all her secrets to making doughnuts that are absolutely free of gluten, but nonetheless pile on the flavor! We'll explore yeasted doughnuts, traditional doughnut-frying methods and even potato doughnuts (among other exciting flavor twists!) as we make treats to thrill any taste bud, including: brown butter doughnuts with whiskey glaze; ginger doughnuts with spicy glaze; chocolate lover's doughnuts; sweet potato doughnuts with candied bacon; yeasted Boston cream doughnuts; and yeasted apple cider doughnuts. Please note that ICE is not a gluten-free facility.

Ayurveda is the world's oldest form of natural healing and health. Its basic premise is that there exists an innate intelligence in our body and mind to be balanced and healthy. Ayurveda offers a knowledge of life with down-to-earth practices to keep this intelligence alive and well during our lifetime. In this two-day weekend workshop with culinary training, we will learn the fundamental principles of Ayurveda. You will learn about the doshas, the mahabhutas, prakriti - body type, the elements, what is health - balance and imbalance. We will learn the simple practices of Ayurveda to maintain health and live in rhythm with natural laws. We will learn about the six tastes of Ayurveda. We will learn how to correct imbalances in our digestion. On both days, we will be in the kitchen preparing food that balances us. We will create two complete meals, including Roasted Kabocha Squash Soup with Cranberries, Cilantro-Stuffed Paratha, Savory Autumn Vegetable-Paneer Tart, Braised Red Cabbage, Poha (steamed dry rice) with Curry Leaves, Rice Pudding, Orange-Fig Compote in Cardamom Syrup
Prosecco, prosciutto and provolone: some of life’s simplest and tastiest pleasures come straight out of Italy. Join ICE Director of Wine Studies Richard Vayda for a delicious discussion, as you tour some of the major wine regions of Italy while tasting traditional cheeses and cured meats. Winemaking, as well as the production of cheeses and salami, will be covered. Throughout it all, you'll enjoy a variety of scrumptious Italian pleasures, from fresh and uncomplicated to rich and complex. Un vero festival! We'll taste at least eight wines, plus matching cheeses.
In this course, you'll learn the techniques to prepare four simple and delicious seafood dishes. The chef instructor will share tips and tricks for selecting the best seafood, and you'll sit down to your completed menu of: refreshing shrimp salad with herbal vinaigrette; Thai curry mussels; fish tacos; steamed fish en papillote with vegetable ribbons, citrus and herbs.
