Chef Sarah Chaminade is a mother of two, so she knows what it's like to have picky eaters---and how to keep your child entertained at the kitchen table. She also realizes the importance of knowing where your food comes from, so she uses fresh and local ingredients whenever possible. In this fun and interactive class, parent and child will follow along to make delightful themed recipes together, then enjoy eating the completed dishes---and listening to the story at the end! This class, celebrating "Charlie and the Chocolate Factory," is not for the chocolate faint of heart! We'll honor Willy Wonka himself by preparing everything chocolate, which both parents and kids will enjoy. We'll make: Hand-Rolled Truffles; Chocolate Bark; Chocolate-Covered Popcorn; and Chocolate Clusters. *Limit 2 children per adult. All children and teens must be accompanied by an adult. Everybody attending class must be registered.*
You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

A tender, flaky and light crust is what often separates a good pie from a great one. In this class, experienced ICE pastry chefs teach you how to make that elusive perfect pie crust --- great for sweet or savory pies. Under their expert instruction, you’ll learn the same techniques and tips used by ICE career pastry grads at New York's top restaurants. You'll make and work with pâte brisée --- which you'll then use to make your very own double crust apple pie from scratch.
Georgian cuisine is finally being recognized for its variety, and the depth of flavors and techniques that characterize its unique culinary traditions. Given the country's location at the exact intersection of Europe and Asia, influences from both cultures have informed the dishes that the region is known for. From the banks of the Black Sea to the Caucasus Mountains, the land provides herbs, nuts and vegetables used in all aspects of its culinary traditions. You’ll become acquainted with the new "it" cuisine as you prepare: adjaruli khachapuri (cheese bread); nigvziani badrijani (stuffed eggplant rolls); tabaka (chicken cooked "under a brick") with blackberry sauce; and chakapuli (braised lamb with tarragon sauce).
Simple and delicious are the themes for this class, which teaches you how to make fresh Italian dishes that are so good --- and easy to execute --- you'll make them for yourself, friends and loved ones again and again. Premium ingredients shine in this menu, drawing from the country's great traditions: Tuscan fennel and raddichio salad; hand-rolled meatballs; risotto Milanese and sauteed broccoli rabe with garlic.
