All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

Simple Italian Dishes

Simple and delicious are the themes for this class, which teaches you how to make fresh Italian dishes that are so good --- and easy to execute --- you'll make them for yourself, friends and loved ones again and again. Premium ingredients shine in this menu, drawing from the country's great traditions: Tuscan fennel and raddichio salad; hand-rolled meatballs; risotto Milanese and sauteed broccoli rabe with garlic.

There's nothing like handmade pasta's flavor and texture, and in this class, we'll have a blast leaning how to make fresh handmade pasta, stuffed pasta, perfect sauces and all the accompaniments! There's nothing like handmade pasta's flavor and texture. Together, we'll learn to make dough the Old World way, then how to shape, cut and stuff it. You and your partner will create a complete fresh Italian dinner of: pappardelle with Bolognese; burro e salvia (butternut squash ravioli with sage butter); and tomato basil bruschetta.

The Sustainable Dinner Party with Dana Cowin

In this hands-on class, Dana Cowin, the author and radio show host best known for her acclaimed career as Editor-in-Chief at Food & Wine, will guide attendees through the preparation of an exquisite Italian meal. Together, the class will make dishes that are both indulgent and sustainable. Dana will also share tips for hosting eco-friendly events (based on her 20-plus years of hosting large-scale food-focused events). Recipe preparations include a Fermented Vegetable Antipasti Plate; Fresh Peperoncino Linguine with Caper Herb Grilled Mussels; and Honeycomb Panna Cotta with Lavender Preserved Rhubarb.

Introduction To Fermentation: Asian Inspired Flavors

Fermentation is an ancient art touted for its health benefits, reducing waste, and robust flavor profile. Its versatility is embraced by chef professionals worldwide to elevate their creations. Each student will make four jarred ferments to take home and the class will conclude with cooking simple dishes to instruct you on how to best put your ferments to use in your own kitchen. Learn and uncover techniques, distinct flavor profiles, safety measure protocols and dish applications as you make and enjoy: gochugaru toasted sesame kimchi; fermented seven spice mango onigiri; fermented green papaya salad with crushed peanuts; Korean banchan golden radish kimbap *this class is vegan and gluten free
