Chef Chad Pagano is both a chef and an avid hunter. As a lover of cooking and sport, he prefers to hunt wild game himself or purchase quality, humanely raised meats from responsible purveyors. In this class, you'll sip tasty tipples as you prepare a game lover's menu of: Apricot Duck and Venison Appetizers; Deer Camp Venison Chili with Homemade Cornbread; Black Truffle Roasted Quail; Marinated Grilled Wild Boar Chops; and Roasted Root Vegetable Medley.

Of the many steakhouses in the U.S., few have a “signature dish.” Among those that do, their claims to fame range from sides and sweets to the steaks themselves. In this cooking class, you’ll prepare a multi-course meal of signature dishes from America’s most renowned steakhouses. Recipes include: chopped salad with hearts of palm, artichoke hearts, and blue cheese from Morton's in Chicago; skirt steak with red wine mojo and orange salsa from Chef Allen's in Aventura, Florida; German-style hash brown potatoes from Peter Luger in Brooklyn, New York; plus mushrooms and onions from Morton's.
One of the oldest winemaking areas of the world, the Iberian Peninsula is currently considered one of the most exciting as well. Steeped in tradition, but not afraid to update and experiment, Spain offers an incredible array of elegant, delicious and varied wines. This class, led by ICE’s resident sommelier, Richard Vayda, offers a sampling of some top regions’ Reservas, as well as fascinating lesser-known examples. Specially chosen regional cheeses and bites will accompany our delightful tasting. We'll taste at least nine wines, plus matching cheeses.
This fun class is especially designed for chile-heads. Couples will collaborate to cook an international menu that hits every region of the hot-and-spicy world --- along with cooling, refreshing cocktails. Your menu includes: blistered shishito peppers; Nigerian beef suya skewers; Korean buldak ("fiery chicken"); cooling cucumber salad; and Thai iced tea.
