Tracy Wilk grew up in Miami, FL, where her love of baking sparked at a young age and never waned—instead of sneaking out with friends on the weekends, she encouraged them to bake with her in the kitchen. After earning her bachelors at the University of Central Florida, Wilk enrolled in the Natural Gourmet Institute in New York City—ironically, a leader in health-focused cuisine, which Wilk translates into dessert innovation. Tracy’s culinary career was shaped at ABC Kitchen in early 2011, focusing on farm fresh cuisine. In 2013, she joined the team at David Burke Kitchen in 2013, overseeing the pastry program there, as well as shaping the programs at Aspen Kitchen and SaltBrick Tavern. Her desserts have been featured by the NYC Wine and Food Festival, INSIDER, as well as earning her the accolade of “40 under 40 Rising Restaurant Stars” in 2017. Tracy began as a lead chef/recipe editor for ICE’s recreational program in 2018.
