You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

Exploring Old World and New World Wines

This tasting examines time-honored Old World wine styles, shoulder to shoulder with New World interpretations of the same grape or blends. This lively discussion will highlight some selected matchups in a fun and relaxed blind-tasting format. ICE's resident sommelier, Richard Vayda, will lead the tour of classic Old World and modern New World wines (both cork and screw cap), as we discuss, taste and rate our favorites. Is it a Bordeaux or a California cabernet blend? A South Australia or German riesling? Cheese and other nibbles for pairing will be offered in between.

An Ayurveda Weekend Workshop with Culinary Training

Ayurveda is the world's oldest form of natural healing and health. Its basic premise is that there exists an innate intelligence in our body and mind to be balanced and healthy. Ayurveda offers a knowledge of life with down-to-earth practices to keep this intelligence alive and well during our lifetime. In this two-day weekend workshop with culinary training, we will learn the fundamental principles of Ayurveda. You will learn about the doshas, the mahabhutas, prakriti - body type, the elements, what is health - balance and imbalance. We will learn the simple practices of Ayurveda to maintain health and live in rhythm with natural laws. We will learn about the six tastes of Ayurveda. We will learn how to correct imbalances in our digestion. On both days, we will be in the kitchen preparing food that balances us. We will create two complete meals, including Kitchari Arancini with Cilantro Chutney, Braised Red Cabbage with Green Apples, Miso Soup with Crisp Tofu & Pickled Scallions, Black Pepper Fettuccine with Chili Cashew Cream Sauce & Spiced Eggplant, Tuscan Kale Crepe with Grilled Oyster Mushroom, Coconut Pear Tapioca Pudding and more.

Introduction to Pastry & Baking Intensive

Learn the basic techniques of pastry and baking in this 12-session class. The course familiarizes students with the recipes and concepts used by professional bakers and pastry chefs, which form the basis of every competent baker's repertoire. The program investigates a broad range of pastries - both classic and modern - to provide a full understanding of all baking categories.

Plant Based Dim Sum

Experience the art of plant-based dim sum in this hands-on class, where you'll craft a variety of vegan bites inspired by classic dim sum flavors. Learn traditional techniques and plant-based adaptations to dumplings, spring rolls, buns, and rice porridge, and pair them all with fragrant tea and a sweet dessert. Students will work in groups to prepare Chili Crisp Smoked Tofu & Scallion Gyoza; Five Spice Mushroom Spring Rolls with Apricot Ginger Sauce; Sweet Hoisin Eggplant & Crushed Peanut Steamed Buns; Ginger Scallion Congee with XO Glazed Seitan Crumbles; and Chrysanthemum Goji Tea with Dark Chocolate Red Bean Truffles. (Note: This class is vegan.)
