It is no secret that proper nourishment can be a powerful aid to the healing process. The Food Therapy certificate program curriculum covers whole-systems biology, core nutritional imbalances, and how to translate a dietary prescription into practical meal planning and preparation. Instruction includes how specific diets and cooking techniques relate to a range of illnesses. Led by Chef Celine Beitchman, MS., ICE’s director of nutrition education, and chefs professionally trained in health-supportive cooking, the course consists of lectures, meal planning, case study discussions and kitchen lab sessions. Each full day consists of a lecture and kitchen lab. Students are expected to attend all lectures, take notes as required and actively participate in class discussions and group projects. Students will work in assigned groups to complete the outlined kitchen lab assignments.

All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. On Sundays in Italian neighborhoods in Brooklyn, families gather for hearty dinners of Italian-American favorites. You will enjoy the preparation of a generous Sunday dinner including: bucatini with meatballs, sweet sausage and Sunday gravy; chicken cacciatore with polenta; fennel layered with potatoes and breadcrumbs; and broccoli salad.

DONA, a woman owned tea company based in Brooklyn, focussed on thoughtful sourcing for sustainability and equity in spice and tea trade. It involves a sensory and educational experience introducing tea and tea blends sourced through direct trade from small scale farmers, that makes the quality super high and leaves a positive impact on the food system. We will be tasting teas and botanicals separately and comparatively to understand the balance of blends and the delicate taste of teas and spices. Navdeep Kaur is the Head of R&D and Education at Dona. Born and raised in New Delhi, India, she brings her academic background in sociology, social anthropology, and food studies to her work. At the intersection of theory and practice, her approach to tea explores how human experience is shaped by the forces of capitalism, culinary globalization, and historical context. At Dona, she leads product development, quality control, ingredient sourcing, tea education, and tasting events.
