Introduction to Wine

This two-session class, crafted by ICE's resident sommelier, Richard Vayda, is tailored to the wine novice who wants a quick, fun and basic introduction to the world of the grape. You'll learn the fundamentals of wine, wine tasting and appreciation, which will start you on the road to critically judging wine color, aroma, flavor and body. You’ll discover the meaning of such wine concepts as dryness, acidity, fruitiness, tannins, varietals, vintages and more. Participants interested in continuing their exploration of wine are encouraged to go on to Wine Essentials. We'll taste up to 18 wines, plus matching cheeses.

Festive Wine and Drinks for the Holidays

Planning a holiday dinner or gathering? Wondering what to pair with those varied rich feasts? Looking for some festive beverages to serve a group? Whether you are searching for something different to imbibe for the holidays or just want to share some classic holiday refreshments, this class will give you ideas them all. Our resident sommelier, Richard Vayda, will host a tasting and discussion of wine and other beverage pairings for the coming entertaining season, whether for a party spread, buffet, dinner or that special dessert. Appropriate festive snacks will be served, and the evening will be topped off with a rich homemade eggnog!

Essentials of Greek Cooking

Take a trip to the Mediterranean with "Essentials of Greek Cooking." This class reveals the secrets behind beloved Greek dishes by focusing on fresh ingredients and traditional techniques. You'll learn to make flaky, savory Spanakopita; master the art of delicate Dolmades (stuffed grape leaves) with bright Avgolemeno sauce; prepare a classic Horiatiki Salad; and create comforting Kota Kapama (a flavorful chicken and orzo dish simmered in a rich tomato sauce). Immerse yourself in the vibrant flavors and traditions of Greek cuisine!

Simple Italian Dishes

Simple and delicious are the themes for this class, which teaches you how to make fresh Italian dishes that are so good --- and easy to execute --- you'll make them for yourself, friends and loved ones again and again. Premium ingredients shine in this menu, drawing from the country's great traditions: Tuscan fennel and raddichio salad; hand-rolled meatballs; risotto Milanese and sauteed broccoli rabe with garlic.
