In this class, Chef Melanie Underwood will show you how to make a cornucopia of confections that will keep your sweet tooth satisfied and your guests in culinary heaven. On the menu: Pear Spice Cake with Maple Cream Cheese Icing; Individual Chestnut Cheesecake; Cranberry Cornmeal Upside Down Cake; Pumpkin Whoopee Pies; Caramel Apple Bread Pudding; Sticky Upside Down Pecan Cake; Sweet Potato Cake with a Bourbon Glaze; and Pumpkin Tiramisu.

Spend two days making the most beautiful cupcakes ever. Award-winning cake artist Chef Toba Garrett reveals her secrets and techniques for the most spectacular cupcakes. The first day is spent making delicious cupcakes and beautiful edible ornaments to decorate them, such as royal icing flowers, marzipan fruits, modeling chocolates, buttercream icings, ganache, and more. On day two, you will decorate the cupcakes with two-dimensional designs, including lattice work, textured rolling pin designs, floral designs, and buttercream piped designs. Students should bring their pastry kits. Prerequisite: Technique of Cake Decorating 1.
Grilling is one of the best ways to cook food simply while obtaining a maximum amount of flavor. You can grill on the stovetop, in your backyard, or over charcoal or gas. In this class you will learn how to modify your grilling technique depending on the medium used.
