You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

Make-and-Take Homemade Pasta and Sauce

Skip the supermarket and come to ICE to produce your own handmade pasta. In this three-hour class, you'll put your muscle into making two fresh pastas and enough sauce to dress those steaming bowls at home. You'll leave the class confident in your pasta-making techniques, and you'll want to create your own variations on these essential pastas. On your menu: Spinach Fettucine; Egg Pappardelle; and Marinara Sauce.

Stocks, Soups and Sauces

Stocks, Soups, and Sauces is a three-day, hands-on course focused on the essential building blocks of professional cooking. Through demonstration and kitchen practice, you’ll learn how to develop depth of flavor, achieve proper texture, and create balanced dishes. You’ll begin with stock making, learning principles of extraction and clarity while preparing chicken, veal, fish, and vegetable stocks, along with classic clarification techniques. Those skills carry into soup production as you prepare beef barley, clam chowder, chicken noodle, and roasted carrot purée, refining seasoning and finishing along the way. The course concludes with sauce making, emphasizing pan sauces and classic preparations such as hanger steak with red wine pan sauce, chicken breast with white wine pan sauce, pan-seared cod with sauce Normande, and vegetables finished with Parmesan velouté.

The Whiskey Steakhouse

Bold whiskey and hearty steakhouse dishes make the perfect couple. You will make a meal that puts whiskey to use, including: ricotta toast with bourbon-bacon jam; New York strip steak with mushroom-whiskey sauce; whiskey glazed carrots and hash browns.

An Italian-American Feast: Sunday in Brooklyn

On Sundays in Italian neighborhoods in Brooklyn, families gather for hearty dinners of Italian-American favorites. You will enjoy the preparation of a generous Sunday dinner including: bucatini with meatballs, sweet sausage and Sunday gravy; chicken cacciatore with polenta; fennel layered with potatoes and breadcrumbs; and broccoli salad.
