All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

Mother Sauces and Derivatives

Mother Sauces and Their Derivatives is a three-day, hands-on course dedicated to mastering the foundational sauces of French cuisine. Through instruction and kitchen practice, you’ll explore the techniques, applications, and variations of the five mother sauces. You’ll begin with tomato sauce and béchamel, preparing classic variations such as shakshouka, sauce Portugaise served with grilled pork chop, croque monsieur or madame, and mac and cheese finished with Mornay. The course continues with velouté and espagnole through dishes like cream of mushroom soup, blanquette de veau, and duck with bordelaise sauce. You’ll finish with emulsified sauces, focusing on hollandaise and its derivatives through eggs Benedict, poached salmon with béarnaise, and vegetables and potatoes finished with sauce Maltaise.

Chocolate Indulgence II: Hot Fudge Brownie Sundae

Lets go extra with Chocolate Indulgence 2, extra chocolaty, extra delicious and extra indulgent! This class teaches you to make all the components of the most chocolaty Hot Fudge Brownie Sundae! Plus we'll finish it with homemade Chantilly cream and a cherry on top. We'll make extra rich chocolate ice cream, fudgy chocolate brownies, rich, dark chocolate fudge sauce and Chantilly cream.

Summer Seafood on the Grill

Biting into fresh-caught seafood, just off the grill with a squeeze of lemon, is summer at its best. In this class, your chef will lead you through a complete seafood grilling menu, perfect for a party or a simple dinner. You will make: gazpacho with grilled shrimp; grilled squid with navy bean salad; Spanish style monkfish skewers; and charred corn, tomato and avocado salad.

Essentials of Greek Cooking II

Learn to prepare a delicious Greek feast! In this hands-on class, you'll master classic Mediterranean flavors. Your menu includes baked Fish Mediterranean; savory Greek Chicken and Potatoes; Prasini Salad with dill and scallions; and spicy, rustic Tsigareli – all finished with fresh Tzatziki. Discover the joy of authentic Greek cooking in this fun, engaging session!
