You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

Plant Based Ethiopian Inspired Flavors

Discover the bold, aromatic flavors of Ethiopian cuisine in this hands-on plant-based cooking class. Using traditional spices and techniques, we’ll create a vibrant menu of stews, pastries, and vegetables, and we’ll consider the textures and tastes that make Ethiopian cuisine – and the regional cuisines within it – unique. Students will work in groups to prepare Curried Chickpea & Lentil Stew with Warm Injera Bread; Lentil Jalapeño Sambusa Pastries with Cilantro Citrus Relish; Cumin Sizzled Collard Greens with Tomato Chili Confit; Berbere Seared Mushrooms with Charred Eggplant Purée; Orange & Caramelized Leek Wild Rice Pilaf; and Ethiopian Coffee Chocolate Avocado Mousse.

Make cookies that others envy in this remarkable baking class taught by an expert ICE chef. There's no cookie you won't excel in! You'll make and take home a full spectrum of cookies, including: sea salt chocolate chunk; lemon shortbread; and raspberry rugelach.

Expand your knowledge and techniques in preparing dishes using fresh pasta dough, homemade sauces, fresh herbs, and more. Over the course of the evening, you will learn to create intricate, trattoria-quality pastas, such as: Potato Gnocchi with Gorgonzola Sauce; Ricotta Cavatelli with Peas, Mint and Lemon; and Spaghetti Carbonara.

Fresh, warm bread is always a great way to start the day, or perfect to add to a meal or have as a quick snack. Suitable for breakfast, snacking, topping or as a side dish, quick breads deliver a lot of flavor and light, airy texture. And what if you have an intolerance to gluten? Learn how to create wheat-free flour blends to make satisfying, fluffy and, yes, gluten-free savory and sweet quick breads that deliver everything we love about their conventional, wheat-based counterparts. Once you try these gluten-free beauties, they'll become requested favorites by your family and friends. On your menu: pear-cardamom quick bread; feta-dill quick bread; Irish soda bread; and banana bread. *Please note ICE is not a gluten free facility
