This tasting examines time-honored Old World wine styles, shoulder to shoulder with New World interpretations of the same grape or blends. This lively discussion will highlight some selected matchups in a fun and relaxed blind-tasting format. ICE's resident sommelier, Richard Vayda, will lead the tour of classic Old World and modern New World wines (both cork and screw cap), as we discuss, taste and rate our favorites. Is it a Bordeaux or a California cabernet blend? A South Australia or German riesling? Cheese and other nibbles for pairing will be offered in between.

Before heading out to your local sushi bar for your next date night, come to ICE to learn how to create your own sushi and sake bar at home. Together, you'll start by learning the basics of how to make the foundation of all sushi: delicious, seasoned rice. You'll then create a variety of sushi accoutrements, along with vegetables and raw fish. Finally, you'll learn to make traditional hand rolls, maki, futomaki, and nigiri, before sitting down to eat with a refreshing glass of Japanese sake or a cucumber-sake cooler.

Richard Vayda, ICE's resident sommelier, says the secret is simply to taste these brilliant wines. So, join us for our grand tour of the Bourgogne, exploring major subregions and villages, south to north, in this delicious and fascinating wine area. Richard searches the ICE cellar to find some lovely aged Burgundies to pair with younger samples, offering a true overview of the Bourgogne. The special tasting will feature at least 9 wines and regional cheeses, of course.
Spend two days making the most beautiful cupcakes ever. Award-winning cake artist Chef Toba Garrett reveals her secrets and techniques for the most spectacular cupcakes. The first day is spent making delicious cupcakes and beautiful edible ornaments to decorate them, such as royal icing flowers, marzipan fruits, modeling chocolates, buttercream icings, ganache, and more. On day two, you will decorate the cupcakes with two-dimensional designs, including lattice work, textured rolling pin designs, floral designs, and buttercream piped designs. Students should bring their pastry kits. Prerequisite: Technique of Cake Decorating 1.
