Culinary nutritionist Jackie Newgent will share energizing tips and nutrient-rich cooking techniques that keep your heart healthy, your body shapely and your taste buds tantalized. You’ll prepare a complete meal from appetizers to desserts, including: rosemary white bean bruschetta; black Mission fig and avocado salsa; Mediterranean baby arugula and goat cheese orzo salad; dill freekeh with roasted carrot coins; California turkey burger sliders; tequila-lime chicken and spinach linguine; sweet potato burrito spirals with red pepper-avocado puree; Asian-style savory oatmeal; chocolate-quinoa energy bars; and fresh green juice smoothie.

Throughout Italy, Christmas Eve is the occasion to sit down to a feast of fish and seafood dishes. In this holiday class, we will cover five classic dishes. We will make baccala mantecato; linguine with clams, grilled calamari with aioli and arugula; baked branzino with fennel and olives and zuppa di pesce.
Come join NYC’s longest running wine course. Over its 45+ year history, thousands of students, food and wine professionals and the wine interested public alike, have participated in this program. This six-session course, crafted by ICE director of wine studies Richard Vayda, uses grape varietals, as well as winemaking regions, as the keys to understanding the full wine spectrum. You will receive a thorough introduction to winemaking, tasting, laws and labeling as you learn about wine components and taste some of the world’s most celebrated wines. In these six sessions, you will sample up to 60 wines! Session 1: Winemaking and Wine-Tasting Basics. Session 2: France: The Wines and Grapes of Burgundy and Bordeaux. Session 3: The Major Wines and Grape Varieties of Italy. Session 4: Spanish and other Warm-Climate Wines. Session 5: Wine Tour of the US West Coast. Session 6: A Tour of Sparkling Wine from Around the World.
By the latter half of the 19th century, bistros were centers of social life in Paris, catering to great painters, writers, musicians and other artists. The simple, down-to-earth food served at such bistros quickly became as celebrated as the eateries' most famous patrons - and it's still celebrated in Paris and around the world today. You will make traditional dishes of that bygone era, such as: steak tartare; frisée salad with apples, lardons and goat cheese in a warm shallot-bacon vinaigrette; moules frites and haricot verts amandine.
Treasures abound in Italy's Piemonte region. This gorgeous tasting canvasses the landscape by highlighting some of its gems, centering on the region's tasty Nebbiolos, including Barolo and Barbaresco. But the region has so much more to offer too, with grape varieties like Roero Arneis, Barbera, Dolcetto and more. Floral, earthy, red fruit with leather---these wines range from rustic to elegantly regal. ICE's resident sommelier, Richard Vayda, guides your tour of this region's wine delights. The tasting will include at least 8 wines accompanied by some appropriately refined cheeses and other treats.
