Ana Ros is the Slovenian chef at Hisa Franko, No. 38 on the 2019 World’s 50 Best Restaurants list. She was named the World’s Best Female Chef in 2017 and starred on Netflix’s "Chef’s Table," season 2 episode 5. Considered the spokesperson of Slovenian gastronomy, Chef Ana is known for modernizing traditional food from the Soca Valley, on the Italian border, where her restaurant is located. Self-taught, Chef Ana draws inspiration from the seasons, locality, travel, and her own character and femininity. Prior to her dinner at the James Beard House, she’ll visit our campus to demonstrate two signature dishes: compa s skuto, fermented cheese and smoked chocolate, and "a masterpiece," apple and goat milk croissant filled with rosehip, roasted apple ice cream and beeswax English cream.

Lets go extra with Chocolate Indulgence 2, extra chocolaty, extra delicious and extra indulgent! This class teaches you to make all the components of the most chocolaty Hot Fudge Brownie Sundae! Plus we'll finish it with homemade Chantilly cream and a cherry on top. We'll make extra rich chocolate ice cream, fudgy chocolate brownies, rich, dark chocolate fudge sauce and Chantilly cream.
Whether you're making a casual dinner or a gourmet multicourse meal. We'll cover techniques including poaching, sautéing, grilling and cooking risotto. Using your newly acquired skills, we'll make and dine on a complete meal of: grilled vegetable gratin; mushroom risotto; pan-seared steak with compound butter and mesclun salad with Dijon vinaigrette.
Do you need an antidote for the cold weather? Can that antidote never be too rich or too flavorful? How about spending a whole evening with lush red wines from around the world and hearty cheeses that match them? Richard Vayda, ICE's director of wine studies, will discuss cheesemaking and cheese service, as well as red wine and food pairing, as you sip and eat the evening away. We'll taste at least eight wines, plus matching cheeses.
No one doesn't like doughnuts. That includes filled doughnuts, cake-style doughnuts, glazed doughnuts and much more. You'll learn how to make yeast and cake doughnut doughs; then create different fillings and toppings, including pastry creams and glazes. Our menu includes: Classic Yeast Doughnuts & Blueberry Cake Doughnuts with glazes and fillings!
