Restaurant School for ages 12-17

Join Chef Emily Peterson for a two-day class on how restaurants develop and present a new dish. Day 1 will consist of: Knife skills practice; basic technique instruction (sauté, grill, blanch, and steam); and a tour of ICE’s legendary stewarding pantry. Day 2: Students will inspire each other to each create a restaurant-ready dish and present it to a panel of esteemed judges, who will provide helpful feedback for making it in the restaurant world!
