Join ICE for the First Fridays at ICE series! Each evening will begin with a drink tasting session by one of NYC’s finest mixologists, sommeliers, or brewers. It will be followed by two culinary demonstrations, with tastings, performed by premiere New York City chefs and pastry chefs. Start your weekend deliciously---you’ll learn new recipes and have an opportunity to hang out with NYC’s top tastemakers! Take a trip to the Mediterranean with "Essentials of Greek Cooking." This class reveals the secrets behind beloved Greek dishes by focusing on fresh ingredients and traditional techniques. You'll learn to make flaky, savory Spanakopita; master the art of delicate Dolmades (stuffed grape leaves) with bright Avgolemeno sauce; prepare a classic Horiatiki Salad; and create comforting Kota Kapama (a flavorful chicken and orzo dish simmered in a rich tomato sauce). Immerse yourself in the vibrant flavors and traditions of Greek cuisine!

This tasting with ICE’s resident sommelier, Richard Vayda, explores the regions' no-holds-barred range of wines---from big, fruity reds to nuanced Pinot Noirs to traditionally produced sparkling wines. A look at each country’s geography, labeling, and complementing cheeses will be included. You'll explore the world’s quintessential winemaking regions in depth. Learn what makes each terroir unique, the characteristics of New and Old World vintages, and the definitive grapes and blends that make each region deserving of special attention. Along with each wine, you'll taste a selection of cheeses from that region, tastily illustrating the culinary adage: "What grows together, goes together"!
As a natural extension of its expansive pastures, renowned ranches and roaming cattle, Texas has a longstanding steakhouse tradition. There, juicy steaks are often served with a hot and rich chile sauce, which mashed potatoes or cornbread greedily sop up. Enjoy these dishes and more as you celebrate the Lone Star State by making and dining on: homemade chips and guacamole; skirt steak with tomatillo-serrano chile sauce; jalapeño creamed corn; and buttermilk mashed potatoes
The farms, orchards and of course vineyards of California's wine country combine to turn the region into one of the most bountiful in the U.S. The kitchens of Napa, Sonoma and the Russian River Valley highlight the quality of the ingredients at hand. Learn to make some of those dishes in your own kitchen, including: fig salad with sweet-spiced walnuts, Gorgonzola and Champagne vinaigrette; pork tenderloin with pan-roasted grapes; scallops with pan-roasted grapes and sauvignon blanc; and warm Dijon potatoes with fresh herbs and peas. You will enjoy these with a selection of California wines.
