Under Chef Lior's guidance, students will create their own unique spice blend and cook a custom dish based on their blend's standout pairings and properties. In the process, you'll open up a world of brand-new flavors by learning to make your own original spice blends, using simple but profound techniques to enhance every dish. Lior Lev Sercarz is the chef, spice blender and owner of La Boite, a destination biscuit, spice and gift shop in NYC's Hell’s Kitchen. Featured in Saveur, Bon Appétit, The New York Times, Food & Wine magazine and more, he was sous chef for Chef Daniel Boulud at Daniel and wrote the cookbook "The Art of Blending." Everyone will receive a copy of Lior’s book, "The Spice Companion," focusing on 102 spices and covering all aspects of spices, from sourcing to blending.

In this fun-focused class, kids and their parents will spend a morning or evening making, and then eating, all kinds of pizza. You'll work together to make, construct and bake: pizza dough; tomato sauce; pizza toppings including prosciutto, fresh herbs and sautéed vegetables; and dessert pizza. *Limit 2 children per adult. All children and teens must be accompanied by an adult. Everybody attending class must be registered.*
From bibimbap to bulgogi, the signature dishes of Korea have seduced America with intoxicating flavors. Sweet-spicy flavor combos are popular, as are the vegetables, meat and seafood that are featured in main dishes as well as in banchan, the Korean assortment of side dishes that appears in most traditional meals. You will learn to make dakgangjeong (hot chicken wings); bulgogi (grilled seasoned sliced beef) with assorted banchan; and bibimbap (seasoned vegetable rice bowl).
Chef Herve Mallivert takes you on a “voyage gastronomique” in this hands-on class highlighting the splendor of seafood. Your journey starts with a brief outline of the sea’s abundance, followed by a focus on flavor, advanced techniques, and the uniquely high quality seafood of the Northeastern coast. You will then transform one of the most iconic dishes from the Northeast – the lobster roll! – preparing it in brioche with avocado pudding, shellfish and horseradish cream, coriander salt, and seaweed chips. Next is monkfish (a Chef Herve favorite) cooked slowly sous vide and served with lobster dashi consommé, polenta cream, and fried monkfish bites.
Have you ever wondered how to make the buttery, flaky brioche loaves and croissants found at fancy bakeries? This class will show you how. During Day 1 of this two-day workshop, you’ll learn how to see the process through, from creating the dough to letting it rise to shaping your own luscious baked goods. On Day 2, you'll complete a menu of: brioche à tête (brioche in the classic fluted, top knotted shape); pain au raisins; classic croissants; almond croissants; chocolate croissants; and croissant monkey bread.
