Join award-winning Chef Ebow Dadzie to create your own chocolate showpiece in this hands-on workshop. Chef Dadzie is a chef-instructor at Monroe College, and pastry chef at the New York Marriott Marquis Hotel in Manhattan. Named as one of the Top 10 Pastry Chefs in America by "Dessert Professional" magazine in 2015, Chef Dadzie has been recognized as one of the 40 Rising Stars Under 40 by "MSR" magazine and the Most Influential Pastry Chef in 2012 by the Black Culinary Alliance, and has been awarded the Medal of the French Government in 2010. An enthusiastic competitor in national pastry showpiece competitions, he was named pastry chef of the year by Paris Gourmet in 2007, and co-holds the 2006 Guinness World Record for building the world's tallest sugar skyscraper (for Food Network). Learn current techniques and design tips to make your showpieces more interesting, artistic, transportable, and enduring. In 2016, CAPS will offer a variety of single and multiday continuing education courses for working baking and pastry professionals, taught by master chefs and critically acclaimed artists from all over the world. At CAPS, you will refine your skills, learn new and innovative techniques, and expand your current repertoire with hands-on classes among peers. ICE’s Fine Cooking series are the classes on which our recreational program’s reputation was built. This intensive course expands on our Fine Cooking 1 series and takes a deeper dive into essential culinary techniques. These full-participation classes teach fundamental skills, not recipes. This course covers everything from fileting a fish, to properly sautéing, to cover poaching techniques and fundamental sauce making. As you advance through the series, you’ll gradually come to understand each cooking concept. You’ll have a firm grasp of ingredients and equipment; you’ll know why things happen; you'll learn how to avoid and correct mistakes. Most importantly, you’ll gain the experience you need to cook with confidence and pleasure - without relying strictly on recipes. Each class culminates with a student-prepared meal. Prerequisite: Fine Cooking 1.
Enjoy Spain right here in New York as you feast on tapas --- one of the great pleasures of Spanish culture. You'll make merry with these classic and contemporary small plates featuring all the flavors of the Mediterranean. After we cook, the party begins. We'll enjoy: pan con tomate with salt-cured anchovies; patatas bravas with aioli and chives; jamón croquetas; gambas al ajillo; and red wine sangria.
