Learn the basics of mixology as you make classic and modern cocktails (which you can then make at home) with simple bar equipment. Led by Anthony Caporale, ICE's Director of Beverage Studies, you will practice making popular cocktails including: Cape Codder; Tom Collins; Margarita; Classic Martini; Manhattan; and more.

From cooling ceviche to hearty ropa vieja, these influences manifest themselves in an array of seafood and meat preparations, not to mention unforgettable side dishes that will make you wonder why you didn't cook Cuban sooner. You will make ropa vieja (shredded flank steak in tomato sauce); pescado enchilado (sea bass in sofrito); frijoles negros (black beans Cuban-style); rice and tostones (savory fried plantains).

We’ve taken the Meatless Monday campaign and applied it to any day of the week. Learn how to incorporate more vegetables, whole grains and beans into your diet with ease. These recipes will take you beyond Monday with robust yet simple-to-prepare vegan dishes. We'll also discuss the health benefits of a vegetarian diet, the best sources for protein, and how to obtain important vitamins and minerals. On your menu: watermelon gazpacho with kale chips and avocado crème; French lentil and toasted sunflower seed burgers with red cabbage slaw and grilled summer squash, zucchini and portobello mushroom kebabs.

Spend an evening learning the techniques and recipes you need to replicate your favorite steakhouse experience at home. You'll make and enjoy classic shrimp cocktail; Caesar salad; grilled New York strip with beurre Maître d'Hôtel; creamed spinach and truffled mashed potatoes.
