Techniques of Cake Baking 1 & 2 provides you with a repertoire of classics, such as layer cakes, individual cakes, and cupcakes. You will also learn to prepare loaf cakes, such as pound cake, as well as a variety of icings. Finally, you will acquire the skills to assemble cakes for special occasions. Lesson 1: Pound & Loaf Cakes; Pound Cakes; Loaf Cakes; Fruit-Filled Crumb Cakes; Marble Spice Cake; and Lemon Buttermilk Pound Cake. Lesson 2: Layer & Pound Cakes; Coconut Raspberry Layer Cake; Chocolate Pecan Cake; Devil's Food Cake; Vanilla, Walnut and Chocolate Chiffon; Angel Food Cake and Sponge Cake. Lesson 3: Individual Cakes; Chocolate Rigo Squares; Fruit Financier; Chocolate Raspberry Cubes; and Mocha Diamonds. Lesson 4: Cupcakes; Chocolate Chocolate Cupcakes; Golden Cupcakes; Lemony Cupcakes; Lemon Coconut Cupcakes; Apple Raisin Streusel Cupcakes; and Chocolate Pecan Cupcakes. Lesson 5: Chocolate Masterpieces; Chocolate Ribbon Mousse Cake; Chocolate Soufflé Roll; and Chocolate Raspberry Trifle.
