One-Week Wedding Cake Workshop

Here is the five-day version of Toba Garrett’s most popular class, the Wedding Cake Workshop. This hands-on seminar covers everything from baking the layers that will serve as the foundation of your tiered masterpieces to advice on transporting them safely to their destinations. You’ll learn: (1) preparation of high-yield yellow cake, citrus curds, buttercreams, and white-chocolate and royal icing; (2) making of white chocolate roses, buds, and leaves to be arranged on a two-tiered cake; (3) gilding, petal dusting, rolled fondant classical drapery, free-hand drapery, cornelli lace, Swiss dotting, freehand embroidery, oval borders, plunger flowers, and appliqué designs; (4) covering cakes with rolled fondant, tiered cake construction, doweling techniques; and (5) pricing, transportation, contracts, and great cake stories! Prerequisite: Techniques of Cake Decorating 1 or 2.

Course Lessons

  • Lesson 1 - INTRODUCTION TO WEDDING CAKES

    • Students prep the following in groups: Hi-yield yellow cake; French vanilla buttercream icing; white modeling chocolate; lemon and lime curds. Students also color white modeling chocolate for next session class.

  • Lesson 2 - ROSEWORK AND MODELING CHOCOLATE

    Students hand-shape roses and leaves from white modeling chocolate. Question and Answer session regarding contracts, delivering cakes, serving sizes and pricing.

  • Lesson 3 - CAKE STRUCTURING

    Students do the following: Level and split all cake layers; structure cake layers with buttercream and lemon or lime curds; light ice cake tiers and refrigerate overnight. Students also return to finishing hand-shaped roses and leaves and then petal-dust flowers.

  • Lesson 4 - FONDANT WORK AND DESIGN

    Students do the following: Color rolled fondant and cover cake tiers with rolled fondant; dowel bottom tier and stack top-tier. Instructor demonstrates the following skills to give students some review points, such as: oval borders, Swiss dots, cornelli lace, drop strings, brush embroidery, classical and free-hand drapery.

  • Lesson 5 - FINAL CAKE DECORATION

    • Students decorate tier cake with instructor’s assistance. Cakes are then displayed on cake stand with tables covered with linen. Staff students are invited to see displayed cake.
