What to Expect

You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. Students are encouraged to bring a light lunch or dinner to all pastry classes.

Fundamentals of Chocolate Tempering

Discover the art and science behind beautifully tempered chocolate in this hands-on class designed for chocolate lovers of all levels. Students will learn what tempering is, why it matters, and how crystal structure affects chocolate's shine, snap, and texture. We'll break down the science of cocoa butter in an easy-to-understand way, then put that knowledge into practice by tempering chocolate together. By the end of the class, each student will create and take home their own chocolate bars made with the chocolate they tempered themselves-perfectly shiny, crisp, and delicious.

Fall Favorites at ICE

That chill in the air is simply inspiration for the warming and original dishes you'll learn to make in this cooking workshop, centered around the exciting produce and flavors of fall. From soups and salads to sides and ribs, all of the dishes on this seasonal menu are perfect for family dinners, parties and more. We'll make and dine on: roasted butternut squash and apple soup; Guinness-braised short ribs with creamy polenta and roasted cipollini onions; and roasted Brussels sprouts with lemon and pancetta.

Essentials of Tuscan Cooking

The simple yet refined flavors of Tuscan cooking are world famous, and with good reason. Whether the product of one of Florence's great restaurants or the simple dishes from a country kitchen, the integrity of Tuscan cooking has won applause for centuries. Learn some of the secrets of this venerable cuisine as you make and enjoy: crostini with roasted eggplant; bistecca alla fiorentina; pollo alla toscana and cipolline agrodolce.

Korean BBQ

The popularity of Korean BBQ is growing, fueled by the DIY aspect of making dinner with friends and family and eating as you cook. You don’t have to have a table with a built-in grill to enjoy your favorite flavor-packed grilled meats at home: grill pans on your stove or an outdoor grill are great stand-ins. Your menu starts with gyeran jjim (steamed egg custard); then moves to the grilling of sokalbi gui (beef short ribs) and samgyeopsal (pork belly) and assorted banchan (spicy vegetable side dishes) complete the meal.
