Join esteemed Chef Charcutier Aurelien Dufour for a professional-level, hands-on Pate en Croute workshop at the ICE Advanced Culinary Center! Chef Dufour is the award-winning founder and owner of Dufour Gourmet, purveyor of some of the highest-quality artisan French style charcuterie in the United States. Chef Dufour, born in Bordeaux and raised in Germany, had a distinct talent for creating showstopping charcuterie from an early age. At 19, he won second place in his first major charcuterie competition, and has not placed below the top three in any competition since. He was named to Zagat’s 30 Under 30, and was a StarChefs rising star in 2013. Most recently, he placed third at the Pate-Croute World Cup at Tain l’Hermitage, France. Chef Dufour has been the Chef Charcutier, overseeing all operations for the Daniel Boulud restaurant group in NYC, for six years.
You will work in teams to execute the class menu. At the end of class, participants gather to enjoy the food they have prepared. Wine is served with meals in most classes. All class menus are subject to change. While a snack platter is offered in both morning and evening classes, you may want to consider a light snack before joining us for class. This series covers all you need to know to create spectacular piped and hand-molded cake decorations. After completing the class, students will be able to design and create gorgeous cakes for friends and family. Courses in this series must be taken in sequence. Prerequisite: Techniques of Cake Decorating 1. Cake Decorating 2: Rolled fondant; ruffling; extension work; royal icing lacework; brush embroidery; and gum paste flowers.
