Join award-winning Chef Ebow Dadzie to create your own chocolate showpiece in this hands-on workshop. Chef Dadzie is a chef-instructor at Monroe College, and pastry chef at the New York Marriott Marquis Hotel in Manhattan. Named as one of the Top 10 Pastry Chefs in America by "Dessert Professional" magazine in 2015, Chef Dadzie has been recognized as one of the 40 Rising Stars Under 40 by "MSR" magazine and the Most Influential Pastry Chef in 2012 by the Black Culinary Alliance, and has been awarded the Medal of the French Government in 2010. An enthusiastic competitor in national pastry showpiece competitions, he was named pastry chef of the year by Paris Gourmet in 2007, and co-holds the 2006 Guinness World Record for building the world's tallest sugar skyscraper (for Food Network). Learn current techniques and design tips to make your showpieces more interesting, artistic, transportable, and enduring. In 2016, CAPS will offer a variety of single and multiday continuing education courses for working baking and pastry professionals, taught by master chefs and critically acclaimed artists from all over the world. At CAPS, you will refine your skills, learn new and innovative techniques, and expand your current repertoire with hands-on classes among peers. In this class, you'll make The Beef's Italian Beef Sandwich, Carmy's Chicken Piccata, Mikey's Family Meal Spaghetti Pomodoro and Marcus' Chocolate Cake. Yes, Chef!
Building a gingerbread house is a superb holiday bonding activity for both you and your child! You'll learn plenty as you create future Christmas memories and traditions. Each child will prepare their own 5-by-6-by-8-inch gingerbread house with their parent assisting, from making and baking the dough to applying the final decorative touches. After class, you’ll take your sugared, frosted, candy-studded masterpiece home. This class is appropriate for children ages 5 and older. Each pair of seats must have 1 child and 1 adult. You may use the same adult name for a maximum of 2 children.

One of the world's oldest cultures, China has a complex cuisine, with a range of regional dishes often not found anywhere outside of the country. Some techniques, ingredients and dishes are similar throughout all of China; this Essentials class focuses on those, giving you a well-rounded overview of Chinese food and culinary culture. From stir-frying and braising to steaming and red cooking, you will learn to use traditional Chinese techniques to make a menu that includes: scallion pancakes with dipping sauce; red-cooked chicken with rice; dan dan noodles; and Chinese broccoli with oyster sauce.
