Chef Gale Gand is a nationally acclaimed pastry chef, restaurateur, cookbook author, television personality, teacher, and entrepreneur. She has been recognized by the James Beard Foundation as Outstanding Pastry Chef of the Year. Gale is a prolific author with eight titles to her credit. For eight years, she hosted the Food Network Series "Sweet Dreams." She is the founding pastry chef and partner, with Chef Rick Tramonto and restaurateur Rich Melman, of Tru in Chicago. Gand and Tramonto earned a Michelin Red M at their restaurant in Stapleford Park, England. Her latest project, Spritz Burger, is collaboration with The Hearty Boys, and features her signature cinnamon-ginger-vanilla root beer and desserts by Chef Gand. Plus, her root beer is available nationally! In 2016, CAPS will offer a variety of single and multiday continuing education courses for working baking and pastry professionals, taught by master chefs and critically acclaimed artists from all over the world. At CAPS, you will refine your skills, learn new and innovative techniques, and expand your current repertoire with hands-on classes among peers. Shh!... This 1920’s cocktail lab is your gateway to ICE’s Secret Sip Society, where you’ll learn how to make the most popular Prohibition-era drinks. In this immersive class led by a skilled bartender, you’ll learn the illicit history of speakeasies while you shake, stir and savor the drinks served in them – no password required. (Just bring your thirst for adventure and love of libations.) In this class, you’ll make the following drinks: Bee’s Knees, Sidecar, French 75, Gin Ricky, Mary Pickford, and Last Word.
Working in teams of two, each student will finish and take home two of the following cakes: vanilla mocha latte with mocha ganache and espresso buttercream; triple chocolate cake with dark chocolate cake, white chocolate ganache, chocolate frosting; chocolate chip cookie dough with edible cookie dough filling and vanilla buttercream; Ferrero Rocher cake with praline ganache and feuilletine crunch and chocolate ganache frosting.

Its cuisine reflects the influences of all of the cultures around it, and the refugees who have settled there in modern times. You'll explore modern and traditional Israeli cooking when you make: cheese bourekas (flaky pastry-filled puffs); fried cauliflower with tahini sauce; chicken meatballs in tomato sauce with toasted Israeli couscous; and fattoush (pita salad).
