Join Daniel Rosati, who makes use of Italy's best vegetables every year in his cooking school there, to prepare a vegetarian feast that includes: Polpettini di Melanzane (Sicilian eggplant fritters); Umbrian Lentil Soup; Porcini Tart; Butternut Squash and Vegetable Ragu with Country-Style Griddle Bread; La Farinata (chickpea crêpes stuffed with mixed greens and herbs); and Gianduja (chocolate-hazelnut pudding).
